mercury in retrograde-best of summer



this summer has been the most delightful summer in memory.  i guess its just that capricorn thing, you know?  we goats are supposed to be slow and steady in life, starting out very serious, and lightening up as we become adults.  i really believe that is true.  when alice was a little sprout of a baby, i was the most serious new mother!  one of those old young people?  so as a capricorn, i am becoming more immature and lighter in my heart with each passing day.  i like that, and look forward to all the new challenges and experiences.  no kidding, it has been a wonderful four months for both me and alice.  life has been beautiful, and so much good living has been done, but I realize the blog has taken a back seat to living life, though i guess i promised regular posts.  all the letters I have received have really struck a chord, and i am so very happy to be re-connecting again.  i'm feeling a little bit rusty, but there is so much to share.

SWEET PASTRY DOUGH
1 1/2 cups unbleached all-purpose flour, plus more for dusting
1/2 cup cake flour, sifted
1 stick (4 ounces) cold unsalted butter, quartered lengthwise and crosswise
1/4 teaspoon salt
1 tablespoon sugar
5 tablespoons cold vegetable shortening
1 large egg
1 1/2 teaspoons pure vanilla extract
CHEESECAKE FILLING
4 ounces whipped cream cheese, at room temperature
2 tablespoons unsalted butter, softened
1 teaspoon cornstarch, sifted
2 tablespoons sugar
1/4 cup sour cream, at room temperature
1 large egg
1 1/2 teaspoons pure vanilla extract
FRUIT TOPPING AND APRICOT GLAZE
1 cup apricot jam
3 tablespoons sugar
3 tablespoons white rum, Cognac or orange liqueur (optional)
1 pint strawberries, hulled and thickly sliced lengthwise
3 kiwis, peeled and sliced
1/2 cup raspberries
1/2 cup blackberries


1)     Measure the flours, butter and salt into the container of a food processor and turn on the machine for about 30 seconds to blend thoroughly. Add the sugar, shortening, egg and vanilla; process just until the dough masses together. On a lightly floured work surface, press the dough into a disk 1 inch thick, sprinkling on a little flour if the dough is sticky. Wrap in plastic and refrigerate for at least 1 hour, or until firm.
2)     Set the dough on a lightly floured work surface and start beating it with your rolling pin, frequently rotating the dough as you gradually form a circular shape. When soft enough to roll, transfer the dough to a lightly floured 18-inch square of heavy duty foil. Working rapidly so the dough remains cold, start rolling it out into a roughly circular shape 3/16 inch thick; patch the dough in places as necessary. With a knife, trim the dough into a 12-inch round—you'll have a handful of leftover scraps to freeze for your next tart. Slide the dough onto a cookie sheet and freeze for 5 minutes.
3)     Roll the edge of the dough up over itself to make a 3/4-inch border. Then roll the border over onto itself, making an upstanding edge. With lightly floured fingers, pinch the thick, raised edge to form a rim 3/4 inch tall and 3/16 inch thick. Make the height even all around, since the filling will leak out at any low spots. Decorate the outside of the rim by supporting the inside with your fingers as you press the outside with the tines of a table fork held vertically. Trim off any extra foil, cover the tart shell and freeze for at least 30 minutes.
4)     Preheat the oven to 350°. Using a handheld mixer, beat the cream cheese until smooth and fluffy, then cream in the butter. Slowly beat in the cornstarch, then the sugar, sour cream, egg and vanilla.
5)     Prepare a folded strip of foil 1 inch wide and long enough to surround the tart shell with an inch extra. Butter the foil and pin the buttered side closely around the tart. Pour in the filling. Bake on the lower shelf of the oven for about 20 minutes, or until the shell is lightly browned and crisp. The filling will puff up to the top of the shell. Remove to a rack; the filling will sink. down. Let cool thoroughly to set the crust.
6)     Slide the tart shell onto a serving platter and remove the foil. Push the apricot jam through a sieve into a 6-cup saucepan, sir in the sugar and rum and simmer over moderate heat for 2 minutes. Brush a thin layer of the glaze inside the tart. Arrange the strawberries in a circle around the inside edge of the tart. Overlap the kiwis inside and mound the berries in the center. Brush the warm glaze over the fruit and serve.

so the real summer favorite for me has been...EVERYTHING with miss alice!  it has been so wonderful to spend so much time with my little bunny...i am so lucky and blessed to have my best friend as a daughter.

Target Desk Spruce


Yesterday I had the most wonderful burst of energy, as only Target can provide.  Like any other red blooded American, I do seriously worship at the alter of Tar Jay!!!  There is really no better place to organize your thoughts, and home.


My bathroom closets are now full of clear shallow bins, and I do have a small return pile to tend to, but for the most part, I really scored.


One of my favorite books has always inspired me.  Pauline de Rothschild's desk always turned me on, with its organized trays full of nescessities, and when I found a Nate Berkus wicker tray on sale, I grabbed it.


So, putting together my loft is of course a work in progress, and I realized it was too heavy on the glass, and metal, and formal stuff.



A little wicker goes a long way towards softening up a more formal, stodgy desk.




Function, function, function!!!


I am currently all out of my formal stationary, and until I re-stock, these pastel note cards and envelopes will do very nicely!  


I love all my silver, but it needs to be tempered with softer items.  This sturdy cardboard organizer is going to be decoupaged soon!  One of my favorite crafts, and then I will fill it with stationary.








Fake flowers.  Yes.  I love them.  I used to be a snob about such things, but really whats wrong with a little color?


I always love colored candles, and I restocked these as well.






The real reason I went in the first place was to grab this gold floor lamp to balance the formal and heavy rose medallion and porcelain lamps I have scattered about.  It gives the room that 70's vibe I love so much!






Chase approves of the magazine basket I put on the floor.  Magazines are one of life's greatest pleasures, and every home should be bursting with stacks of them!  Its no fun to pick up a laptop and google!!!  Today I am going to go out, and buy a stack of glorious, glossy magazines, and fill my new basket to the brim!

Random Thoughts and Chicken Soup


Today has been one of those weird ones.  I woke up at eight on the button as usual.  Yesterday I slept almost the whole day away with a cold, and some drama.  No, I do not watch the Oscars!  Really.  Never.  Ever.  While I am a huge film buff, and consider watching a great movie to be one of life's greatest pleasures, that industry and all involved leave me cold.  Even the fashion doesn't draw me in, as the awkward deportment really detracts from the gowns.  Somehow I always get the feeling that all the celebrities really can't wait to put their yoga pants back on, and that is a real buzz kill for me, so I just truly keep away.  I truly live in the past...todays styles don't speak to me on any level.     


So I am in a funk today.   Making chicken soup is supposed to be good for the soul, right?   I just popped one whole organic chicken in a pot with the usual dill, onion, carrot, peppercorns, and celery.  Miss A really loves it.


My front hall is a disgusting mess, and needs to be organized.  Some time ago, I decided to line up all of the shoes that don't fit into my closet, right out in the open, by the front door.




The new hat.......I bought this hat last week, in anticipation of my upcoming trip to Iceland.  Now, I think its just going to stay put, as plans for Iceland have been, well, put on ice.  lol


I think these belong to the guitarist in my part time/hobby/therapy band/joke...think spinal tap... then throw in a little bit of 80s style spikes and that is my relaxation these days lol...


It was a beautiful winter.  Mild enough, with some beautiful snowy moments.





So, back to movies.  Gena Rowlands is my all time favorite actress.  John Cassavetes films are perhaps some of my favorites.


Spring is in the air, and my very well stocked bar cart is all ready for it.



There is no better plan than pouring a strong drink, and staring at the chandelier, working out ones feelings.  Hope everyone had a wonderful February, and heres to a great March!!!
